Week 1: Breakfast at Tiffany’s
Eggs Benedict – Bake English muffins, proper poached eggs, Hollandaise sauce, Broccoli Edam & Tarragon Muffins, Cheese Soufflé Finish off the meal with 3 and a Marbled Chocolate Soufflé for dessert.
Week 2: Lunchtime Appeal
Ciabatta, Fresh Baked Mussel and Saffron Pots, Lime and Fennel Roasted Fish in Banana leaves served with a Tropical salad of Grapefruit, Rocket, Radish and Carmelized Almond followed by a Cardamom Custard Tart.
Week 3: Oui! Oui! French Night
French Sour Dough Baguettes, Avocado Anchovy Paté, Coq au Vin and Dauphinois Potatoes with Crépe Suzette
Week 4: Michelin Star Night
Phyllo cups with grilled Courgette and Caper Tapenade and Sweet Pepper Cream Cheese and Wasabi Mousse, Grilled Rack of Lamb with Cauliflower puree, Roasted Brinjal Stack and Black Cherry Jus; we finish off with a decadent Deconstructed Baked Black Cherry and Kiwi Cheesecake tower.
Week 5: Knife Skills and Techniques
Cream Cheese and Sweet Chilli spiral rolls, Wild Mushroom Terrine with Tropical Fruit and Balsamic Reduction, Sweet and Sour Pork Stir Fry Chop Suey and lastly Profiteroles with Candied Ginger Cream Filling.
Week 6: Skills Night
Artisan Bread Rolls with assorted toppings, Roasted Butternut and Carmelized Red onion and Feta Quiche with Coconut crème, Coronation Chicken with Mango and a Curry Sauce served with Devilled Parmesan Potatoes and finish the evening off with Homemade no-churn Red Velvet Cake and Cardamom Ice-Cream!
